Organic Shopper is an organic and lifestyle magazine with a mission to grow organics by inspiring shoppers to shop organic!

To make the filling:

1. In a large pan over medium heat, combine the apples, brown rice syrup, apple juice, cinnamon stick, salt and raisins. Bring to a boil and simmer for 20 minutes.

2. In a small bowl, dissolve kudzu     in water.

3. Add the vanilla extract and kudzu
mixture to the pan and cook 2 minutes more. Allow to cool and set aside.
 

To assemble the strudel:

1. Preheat the oven to 350 degrees F.

2. Place the apples lengthwise along the center of the dough. Starting on one of the long sides, roll the dough to form a log with the apples inside. Pinch the edges closed and place log on a baking pan lined with parchment paper.

3. Bake for 40 minutes. Remove from oven and allow to cool. Slice into equal portions and garnish with cinnamon.

12 organic Fuji apples (peeled,
     cored and cut into ½ inch wedges)
¾ cup brown rice syrup
3  cups organic apple juice
¾ cup raisins
2  to 3 pinches sea salt
1  cinnamon stick
2  teaspoons vanilla extract
¼ cup kudzu root starch
¼ cup purified water

For the dough:
⅔ cup organic whole wheat pastry flour
⅔ cup organic unbleached flour
2  ounces safflower oil
1  pinch sea salt
½ cup water
Optional garnish:
Ground cinnamon

To make the dough:

1. In a large bowl, combine the flours and sea salt.

2. In a small bowl, whisk together the oil and water and add to the flour mixture.

3. Stir gently by hand until the dough is uniform.

4. Using a rolling pin on a flat surface, roll dough into a rectangle about 8 x 12 inches, adding flour if necessary.
